Thyme was brought to New Zealand by gold miners during the gold rush in the late 1800s. Entrenched itself in the countryside of Central Otago, it’s one of the favourite plants for bees. Thyme honey is very strong and aromatic with herbal and savory flavours. It is delicious and its taste is persistent and lingering in the mouth. It is a very pure honey with a light amber to amber colour when it’s liquid and beige to brown when it’s crystallized.
